Full bodied Cabernet Sauvignon with a firm structure. Its aroma reveals hues of forest berries and back plums with traces of mint and eucalyptus together with mineral and oaky flavors.
The Vineyards
The kosher wine is made from Cabernet Sauvignon grapes harvested in two adjacent vineyards in Moshav Kerem Ben Zimra: one a moderately sloping, west-facing vineyard west of the village; one a terraced vineyard on a steep, west-facing slope in the region referred to as the "amphitheater". These well-nurtured vineyards, planted in rocky soil at an elevation of 800 meters, yield an annual harvest of grapes rich in their characteristic varietal color and flavors.
Production
The process began with a selective manual harvest in the early hours of the morning, followed by fast reception at the winery to remove stems and extract the must. The must was cold-macerated for several days to preserve the richness of the grape's flavor and color. This was followed by a controlled fermentation process and gentle pressing. The kosher wine was aged for 19 months in French oak barrels, creating a balanced integration of flavors and enhancing the wine's complexity.
