Single Vineyard-Kerem Ben Zimra
Location of Vineyard: The vineyards are situated in Kerem Ben Zimra, on the Dalton Ridge, in the Galilee. 700 meters above sea level.
Soil : Soils are comprised of a limestone and a portion of a volcanic light soil. On the margins, some clay textures are seen.
Grape variewties: 100% Cabernet Sauvignon.
Harvesting : Bunch thinning; leaf removal; hand picking at early hours of the morning.
Winemaking: A meticulously selection of high-quality grapes, following a gentle crush and fermentation at moderate temperature. Special yeast strain has been utilized. A cold maceration for two days assisted for extracting some fruit aromas, while high temperatures allowed later on to extract an intensive red colour from the skin.
Ageing : The kosher wine has been aged for 18 months in French oak barrels.
Yearly production : 7000 bottles
Tasting notes: Tasting notes: This superb wine is succulent and rich on the middle palate, showing a ruby red deep colour. The kosher wine elicits some complexity of a balanced character and a fresh one. The blackberries and the cherries aromas are dominant, accompanied well with mint and herbs.
