Harvesting conditions: Hand-harvested in the early morning hours and transported to the winery in small crates. Growing region: Kerem Ben Zimra in Ramat Dalton Soil and climate: Basalt soil combined with terra rossa, where vine roots are well aerated. Cool climate, with hot days and cool nights in the summer months. The region enjoys low humidity levels. These conditions are conducive to the healthy development of the grape`s color and its aromatic and taste substances.
Wine production process: The juice is fermented with the skins for six days in special fermentation tanks, where the kosher wine is whirled with the grapes to allow for maximum extraction of the color, flavor and aromatic components of the red grape skins. The kosher wine remains in contact with the skins for an additional 12 days after the fermentation process ends, to ensure the completion of the extraction process. The kosher wine is then aged and matured in French oak barrels for 18 months.

Characteristics: A deep red kosher wine with rich flavors of ripe red fruit, raisins, oak and a hint of vanilla. It`s elegant flavor is well balanced and leaves a pleasant, lingering taste on the palate.
