The Vineyards: The grapes were picked by hand towards the end of August. After minimum skin contact the must was pressed and allowed to settle. Alcoholic fermentation was started in stainless steel tanks. Fermentation was completed in new French oak barrels and where the kosher wine was left to mature on its gross lees, and was stirred (battonage) a regular basis. The kosher wine completed approximately 30% Malolactic fermentation.
Regular tasting by the winemaker decided when the kosher wine was ready and could be extracted from the barrels. The kosher wine was aged for approximately 4 months in new barriques.
Analysis: Alcohol: 13.5% pH: 3.34 Total Acidity: 5.5 g/l
Tasting Note: The reserve chardonnay is an elegant fruity wine which emphasizes the fruit over the barrel, undertones of melons pears and honey mingle harmoniously with the more savory and toasty notes of the oak.
Suggested serving temperature: 9-110 Celsius
Serving Suggestions: Chardonnay is a great wine and an ideal accompaniment to smoked meats or fish, grilled chicken or fish, or alone as an aperitif.
