During the 2005 vintage one vineyard produced a wine of exceptional quality, the grapes from this kosher wine came from the Meron Vineyard.
The Meron vineyard is located on the northern slopes of the vineyard at an altitude of 720 meters where the mainly chalky soil provides a unique terroir.
Winemaking:
The grapes were selectively picked by hand in late September 2005 at optimal levels of ripeness. During the 10 day fermentation the grape cap was pumped over several times a day to increase the depth of colour and levels of extraction of the kosher wine in the gentlest way possible. Before completing fermentation the kosher wine was pressed out, and the free run wine was separated and used to make this wine. The kosher wine was aged in one and two year old French oak barrels for about 8 months, accentuating the fruity nature of the wine.
Tasting Notes: It is the extraordinary eucalyptus and mint and cassis qualities that make this kosher wine so special, along with a soft velvety texture soft smooth tannins and a long fruity finish.
