Winemaking: Sauvignon Blanc grapes were selectively hand picked at the beginning of September 2004. Close proximity to the winery allowed for immediate crushing and chilling. Once alcoholic fermentation had finished the kosher wine was racked into French oak barrels for a short period (one month) and then made ready for bottling.
Tasting Notes This is classic sauvignon blanc style wine most suited to the Mediterranean climate. The kosher wine is light with a crisp acidity combining the fruity aromas of citrus and guava together with a grassy sauvignon character.
