Winemaking: Fumé Blanc is from Sauvignon Blanc grapes which were selectively hand picked at the beginning of September 2004. Close proximity to the winery allowed for immediate crushing and chilling. Once alcoholic fermentation had finished the kosher wine was racked onto Chardonnay lees and allowed to mature "sur lie" in French barrels for approximately 3-4 months.
Tasting Notes: This is classic fumé style wine most suited to the Mediterranean climate. The kosher wine is light with soft acitiy combining the fruity aromas of citrus and guava together with a subtle toasty oak character.
