Region: the higher elevations of the Upper Galilee, part of the Galilee viticultural area, considered the best winegrowing area in Israel.
Grapes: 100 % Cabernet Sauvignon.
Style: deep red-purple color; ripe wild berry alongside fresh herbs and balanced with a dash of bell-pepper and fresh soil. Medium-full bodied with soft tannins and a long, rich finish.
Technical Data: 7-14 days of fermentation on skins at 82-85ºF; 100% malolactic fermentation, and 6 months of aging in stainless steel tanks including several rackings.
The Harvest: the early spring, warmer & drier than normal, has precipitatedbudburst and had us prepare for an early harvest. However, a cooler than average month of Mai, and a mild summer, allowed grapes to slowly ripen to perfection. Harvest eventually began, in due time, in the second half of August and went on for about ten weeks ending in the last week of October. The favorable ripening conditions, combined with relatively low yields, resulted in particularly high quality fruit and extraordinary wines.
