Region: The higher elevations of the Upper Galilee, the northern part of the Galilee viticultural area.
Grapes: Chardonnay.
Style: Clear straw-like color. A delicate Chardonnay with abundant varietal characters of green apple, pear and loquat, as well as hints of butter, walnut and oak. Refreshing to the palate balanced by a velvety texture. The finish is long and flourishing.
Technical Data: Some 60% of the kosher wine underwent cold fermentation in stainless steel, with the remaining 40% fermented in new French oak barrels. The barrel-fermented wine also underwent malolactic fermentation and aged on yeast lees for six months. The synthesis of the two fermentation processes contributes to the wine's unique balance.
The Harvest: A warm winter and a rainy spring with low temperatures resulted in average precipitation and late bud-burst and blooming. The spring and early summer were characterized by pleasant weather with below-average temperatures, which contributed to a lengthy ripening of the fruit and a later-than-usual harvest. The harvest itself was characterized by typical weather conditions, but in mid-October brief showers delayed the ripening of the fruit, which caused the harvest to continue until early November. The long harvest allowed bringing in each vineyard block at its optimal time, and contributed to the creation of high-quality fruit.
Serving Suggestions: Best served cold (54-57° F / 12-14° C) with traditional fish dishes such as sole or trout in butter and almonds, pasta with butter- or cream-based sauces, and even deserts like apple strudel.
Storage and Aging: Store in a cold, dark area. The kosher wine will age well for 2-3 years if stored in proper conditions.
