Style: Distinctive pink color with shades of violet. A very refreshing and aromatic wine, combining notes of pomegranates, fresh strawberries, rose leaves and spices. A dry rosé, with good and balanced acidity, and a rich and pleasant texture. The finish is fruity and refreshing.
Technical Data: The hand-harvested Sangiovese grapes were crushed immediately upon their arrival to the winery. The juice followed a classic white wine process, settling for 24 hours and undergoing cold fermentation (at 57° F / 14° C). Rosé was produced from the Cabernet and Syrah grapes in the saignée (bleeding) method: a small percentage of juice from the red kosher wine tanks, a few hours after receiving the grapes, was drawn off and then fermented separately.
The Harvest: A warm winter and a rainy spring with low temperatures resulted in average precipitation and late bud-burst and blooming. The spring and early summer were characterized by pleasant weather with below-average temperatures, which contributed to a lengthy ripening of the fruit and a later-than-usual harvest. The harvest itself was characterized by typical weather conditions, but in mid- October brief showers delayed the ripening of the fruit, which caused the harvest to continue until early November. The long harvest allowed bringing in each vineyard block at its optimal time, and contributed to the creation of high-quality fruit.
Serving Suggestions: A perfect companion to summer dining, serve cold (46-50° F / 8- 10° C) with choice pizza, chicken wings in teriyaki sauce, and fresh grilled fish.
Storage and Aging: The kosher wine is at its peak during its first year, and will age well for about two years if stored in proper conditions.
