Region: The higher elevations of the Upper Galilee, the northern part of the Galilee viticultural area.
Grapes: Sauvignon Blanc.
Style: RA refreshing and aromatic wine, combining notes of citrus fruit, pear and tropical fruit (kiwi, fejoya) with a light leafy and mineral background. A delicate Sauvignon with good acidity and a balanced sensation on the palate. The finish is long and refreshing.
Technical data: The hand-harvested grapes were gently crushed in full clusters. The kosher wine underwent a three-week fermentation process under variable temperatures (54-64° F / 12-18° C) with various yeast varieties. Immediately after fermentation, the kosher wine was separated from its heavy sediment, and stored several months in stainless steel on light yeast lees.
The harvest: A warm winter and a rainy spring with low temperatures resulted in average precipitation and late bud-burst and blooming. The spring and early summer were characterized by pleasant weather with below-average temperatures, which contributed to a lengthy ripening of the fruit and a later-than-usual harvest. The harvest itself was characterized by typical weather conditions, but in mid-October brief showers delayed the ripening of the fruit, which caused the harvest to continue until early November. The long harvest allowed bringing in each vineyard block at its optimal time, and contributed to the creation of high-quality fruit.
Serving suggestions: Wonderful as a cold aperitif (46-50° F / 8-10° C) on a hot summer day. A perfect complement for grilled fish, seasoned pullets, and pasta with delicate sauces.
Storage and aging: Store in a cold, dark area. The wine will age well for two or more years if stored in proper conditions.
