Region: The higher elevations of the Upper Galilee, the northern part of the Galilee viticultural area.
Grapes: Viognier.
Style: Clear lemon yellow color. An aromatic wine combining fruit notes of ripe apricot and nectarine with a touch of tropical fruit, banana and melon. A balanced Viognier with gentle acidity and hints of oak. A medium-to-full bodied wine with a long, velvety finish.
Technical Data: Some 60% of the kosher wine underwent cold fermentation in stainless steel, with the remaining 40% fermented in new French oak barrels. The barrel-fermented wine aged on yeast lees for six months. The cold fermentation enabled the kosher wine to preserve the variety's fresh characters, while wood and yeast characters were added to the barrel-fermented wine.
The Harvest: A warm winter and a rainy spring with low temperatures resulted in average precipitation and late bud-burst and blooming. The spring and early summer were characterized by pleasant weather with below-average temperatures, which contributed to a lengthyripening of the fruit and a later-than-usual harvest. The harvest itself was characterized by typical weather conditions, but in mid- October brief showers delayed the ripening of the fruit, which caused the harvest to continue until early November. The long harvest allowed bringing in each vineyard block at its optimal time, and contributed to the creation of high-quality fruit.
