Harvesting conditions: Hand-picked late harvest of fully ripe fruit, which is transported to the winery in small crates. The vineyard`s yield was 600 kg per dunam (0.1 hectare). Growing region: Kerem ben Zimra in Ramat Dalton.
Soil and climate: Basalt soil combined with terra rossa, where vine roots are well aerated. Cool climate, with hot days and cool nights in the summer months. The region enjoys low humidity levels.
Wine production process: The grapes were picked at the end of the harvesting season when sweetness is determined by a 27% sugar level. This fermentation value causes the grapes to shrivel slightly, intensifying aromatic and flavor substances. After pressing the grapes underwent a slow and controlled fermentation process at a temperature of 8°C, during which time it was fortified with brandy to preserve the grapes` natural sweetness and raise the alcohol level.
