An elegant, full-bodied Merlot with intense tannins. The kosher wine has the rich red forest berry and cassis flavors typical of this grape variety. Its bouquet is one of Mediterranean herbs and spice leading to a long balanced finish.
The Vineyard
This kosher wine was made from a blend of 86% Merlot with an added 14% of Cabernet Sauvignon harvested in two choice vineyards located in Manara and Kerem Ben Zimra in the upper Galilee. The Manara vineyard provided fruit with classic character with firm elegant structure, the Kerem Ben Zimra vineyard contributed a more delicate fruit with layers of herbal flavors.
Production
The grapes were selectively hand-harvested in the early morning hours and transferred to the winery quickly for the production of must. The must was then cold-macerated for 4 days prior to fermentation, at a temperature of 13°, to maximize the grape's rich flavor and color. After a slow and controlled fermentation process, the kosher wine was aged in French oak barrels for 15 months. This process completed the wine's structure and contributed to its complexity.
Serving Suggestions
Particularly suitable for select beef cuts, venison dishes and sharp cheeses. The kosher wine will continue improving in the bottle in the following years.
