Harvesting conditions: Hand-picked in the early morning.The grapes were harvested in September 2003 and transported to the winery in 200 kg crates.
Soil and climate: Basalt soil combined with Terra Rossa, where vine roots are well aerated. Cool climate, with hot days and cool nights in the summer months. The region enjoys low humidity levels, which gives optimum conditions for excellent development of grape`s color aroma and flavor.
Wine production process: The grapes were separated from the clusters and left to soak with their skins for two weeks. During fermentation 2% Viognier wine was added to the Shiraz – a process common to the Cote Rotie region in France`s Rhône Valley. The ideal amount of color, aroma and flavor substances were extracted from the skins during fermentation. After pressing and undergoing a light natural clarification process, the kosher wine was aged in French oak barrels for 12 months.
Characteristics: A bold garnet wine with impressive flavors of wild berries and pepper and a gentle hint of toasted oak blended with vanilla and chocolate. It is a complex wine with a pleasantly lingering and velvety finish.
